Solyanka (also spelled soljanka), which comes from the word for "salt," possibly originated in Ukraine in the 17th century and became beloved by Russians. This is a hearty, thick soup with salty cured meats, sausages, olives, pickles, sometimes carrots, and dill and sour cream for garnish. Meat Solyanka is a well known Russian and Ukrainian soup with sour and smoked meaty flavour.
There are meat, fish and vegetable (mushroom) Solyanka but today we are cooking the meat one. Russian salted cucumbers are always used in Solyanka and they give the soup that distinctive salty and sour taste. Sometimes some pickle brine is also added. In meat Solyanka you are supposed to use several types of meats (at least 3 different types), most of the meats should be smoked. For meats in Solyanka soup all kinds of smocked supplies are used: ham, sausages, frankfurters, chicken, bacon.

Welcome to my channel Alice Yummy Food and hello from Milo.
Today I'm going to be showing you how to make
this amazing Russian soup which is called
Solyanka and I absolutely adore this soup
because there's so many variations and you can make
it so easily.
I hope you enjoy this recipe, let's get started.
We're going to need a carrot, onions, lemon,
potatoes, gherkins or pickles, I've got some
black olives, sour cream, fresh parsley and dill,
I've got some beef here and also different
types of smoked cut meats. You can use any meat that you have.
I've got some pork sausage which
is smoked, some normal kielbasa and some smoked roulade
and this got a lot of nice meat and fat
on it which is really gonna give that extra flavor
but you can use any meats and cuts that you have
in your kitchen, some tomato paste, bay leaves and peppercorns.
Place your beef into a pot with some
water and we're going to cook this for about an hour
and a half up to two hours to get all the
flavor. Add onion. Cut your pickles lengthwise
and we're going to cut them into nice strips.
Cut your meat into stripes as well
and we do the same with all the sausages.
Add all your meat
into a pan and fry it for about five minutes.
Cut your onion nice and fine.
Add carrots and tomato
puree we're going to cook this for about five to
seven minutes then add your gherkins add your beef
cut your potato add potato into your soup
then add the meat
and fresh parsley and greens
lastly you can add some gherkin juice this is optional
but it does add the flavor we're going
to leave it on a low heat
for about 20 to 30 minutes add
some black olives thank you
