What You Need:
For Malasada dough:
1/2 cup water
1/2 cup milk
2 1/4 tsp yeast, or 1 package
1/3 cup sugar
2 TBL butter, melted
3 eggs
3 1/2 cups bread flour
1 tsp salt
Raspberry Cream:
1 cup heavy cream, whipped
1/2 cup raspberry jam,
warmed for 10 seconds
1. In a large bowl, add milk, sugar and water. Add yeast and allow to bloom 5 minutes or until foamy. Add butter, eggs, flour and salt. Kneed dough for ten minutes. It will be a little sticky. Allow to rise 2 hours or until doubled in size.
2. Whip heavy cream to stiff peaks. Fold in jam and allow to chill for 2 hours in the fridge.
3. Once dough is risen, place on floured surface. Roll out to 1/4 inch thickness. Punch out small rings with biscuit cutter or cup. Place rounds on parchment-lined sheet and allow to rise 1 hour.
4. Heat a pot of cooking oil to 350 degrees. Fry dough on each side about 3-4 minutes or until golden. Keep the heat as close to 350 as possible. A little lower is okay. If it gets too high, the malasadas will burn. Once done, remove malasadas to rack to cool completely.
5. Fill malasadas with raspberry cream from the sides. Go slow, they fill quickly. Serve with tea or coffee. Keep leftovers in the fridge.
