A legendary meat platter if you’re aching for some cold resistance. Zelda, Link and Spicy Pepper Steak are properties of Nintendo. Here's how to make it!

What You Need:
Pepper Marinade:
1/3 cup soy sauce
1 TBL tomato sauce
2 tbl chipotle peppers in adobo
2 tsp ground Szechuan or black peppercorns
1 lime, juiced
1 TBL brown sugar
1 shallot
1 cup Dr. Pepper

The Rest:
1 8-10 oz. chuck steak
1 duck breast
1 TBL bacon fat
4 oz. mushrooms, sliced

Score one side of your steak with hashmarks. Score the fat of your duck breast as well. Place each cut of meat in its own small zip top bag. In a blender, crush all marinade ingredients. Divide marinade between both bags of meat. Get out as much air as possible and marinate in the fridge for 2-4 hours.

Remove meat from bags and allow to come to room temperature, about 20 minutes. Preheat your oven (or toaster oven) to 400 degrees. Line a small baking sheet with foil. In a cold cast iron pan, place your duck breast fat side down. Render fat on low heat for 5-10 minutes or until golden. Cook a few minutes more on the other side. Place duck on baking sheet.

Cook steak in rendered duck fat on medium high, 4-6 minutes each side. Place on the baking sheet with duck. Place in the oven while you finish the recipe. Add bacon fat or butter to the pan and fry your mushrooms until golden, 5-8 minutes. Remove from pan.

Add reserved marinade to pan and fry 3-5 minutes, stirring constantly. Add Dr. Pepper and reduce until a thick syrup forms. Remove from pan and set aside. Remove meat from the oven and allow to rest, adding any juices in the pan to the sauce.

To assemble platter: place both cuts of meat on a large plate with a small pool of sauce under steak, reserved mushrooms, sliced peppers and a little green salad. Serve warm.
