Mushroom filling:
8 oz mushrooms
3 TBL shallots, minced
1 clove garlic, minced
1/4 cup water
1 TBL clarified butter
1 TBL brandy, optional
1/3 cup milk
3 TBL parmesan cheese
Salt+Pepper to taste

The rest:
1/2 recipe Mach Pizza dough

Shredded cheese
Melted butter

Remove the bottoms from the mushrooms. Quarter the tops and the bottoms. Place mushrooms in a large pan and add water. Cook over high heat until water comes to a boil. Mushrooms will give off their moisture.

Keep cooking until the water evaporates. Once most of it is gone, add the clarified butter, shallots and garlic, and a couple pinches of salt and pepper. Once mushrooms are golden brown, turn off the heat and add the brandy scraping the bottom of the pan.

Add the milk. Cook over medium heat until the mushrooms tighten up. Turn off the heat, stir in the Parmesan cheese. Place in a bowl or plate and allow to cool.

To make the bake: roll out dough into a loose oval. Spoon mushrooms into center. Sprinkle on a handful of cheese. Bring the ends of the dough together and pinch them closed. Tuck the ends into the center. Flip over and place on a parchment lined sheet. Brush with melted butter and cover for 20 minutes.

Preheat an oven to 350 degrees. Brush the bake with more butter. Bake for 15 minutes. Increase the heat to 400 and bake for 8-10 minutes or until golden brown. Remove from oven and brush with more butter.

After 5 minutes, remove from pan using a mitt, it will still be hot. After it's cooled for about 20 minutes, you can slice it in half and eat alone or dip it into ranch.
