Pumpkin sponge:

1 egg
1/3 cup sugar
1/4 cup pumpkin puree
1/4 cup flour
1/8 tsp of baking soda
1/8 tsp of baking powder
1/8 tsp of pumpkin pie spice
Pinch of salt
1/4 tsp vanilla

Pumpkin mousse:

1/2 package gelatin (1 1/4 tsp)
1/4 cup milk
Scant 1/2 cup pumpkin puree
Pinch of pumpkin pie spice
1/4 block cream cheese, softened
1/2 tub whipped topping (1/2 of an 8 oz tub)
Sugar, as needed
Orange gel color

Whipped topping, to serve
Black fondant, to decorate
Mint, to decorate

For Pumpkin Sponge: Line mini tart pans with foil. Spray with no-stick spray and dust with flour. Dump out excess.

In a small bowl, combine flour, baking soda, baking powder, pumpkin pie spice and salt. In a separate bowl, whip egg and sugar until lightly fluffy and pale yellow. Then, whip in the pumpkin and vanilla. Fold the dry ingredients into the wet until just combined. Fill tart pans half of the way up.

Bake in a 375 degree oven until just barely cooked, about 10 minutes. Cool completely then remove from pans. Set aside.

For Pumpkin Mousse: In a small pot, combine gelatin and milk and allow to soak for five minutes. Then, melt over low heat until the gelatin dissolves. Set aside.

In a large bowl, whip cream cheese until light. Whisk in the pumpkin puree. Add the milk/gelatin mixture. Then, whisk in 1/2 tub of whipped topping and orange gel color. Spoon the mixture into pumpkin silicone molds. While it sets, slice fondant into pumpkin face shapes.

Place molds on a baking sheet and tap to release air pockets. Refrigerate for 2-4 hour or until set, then freeze for 1 hour so you can release them from the mold.

To serve: place a pumpkin mousse onto a pumpkin sponge on a small plate. Dot the side with whipped topping and put a large dollop on the top. Place a mint in the dollop, and dot the pumpkin with fondant to decorate. Top with hat and serve immediately.
