Today I’m sharing five Mediterranean-inspired dishes that are perfect for enjoying with family and friends. 🌿
Whenever I have people over, I want the food to feel a little special, but I also love serving dishes that are wholesome and leave you feeling good afterward.
I’ve included a mix of recipes you can prep ahead and dishes that are best finished just before serving, so hosting can feel a little more relaxed.

🎃 1. Roasted Squash & Kale Salad
1 butternut squash
1 kabocha squash
Curly kale, as needed (regular kale works too)
A handful of almonds & pecans
Extra virgin olive oil, generously
1/3 tsp salt
Black pepper
A little thyme
Roast the butternut squash at 400°F / 200°C for about 25 minutes.
You can roast the butternut and kabocha together. Just leave a little space between the pieces so they roast and caramelize rather than steam.
Massage the kale well with olive oil, salt, and pepper.
Top with the roasted squash and toasted almonds and pecans. You can also use just one type of nut.
🍅 2. Mediterranean Tomato & Olive Salad
About 15 cherry tomatoes, halved
1/2 red onion, thinly sliced
7–8 Kalamata olives, halved
1 garlic clove, grated or minced
1/2 tsp dried oregano
1/2 tsp salt
Black pepper
2 tsp red wine vinegar
Extra virgin olive oil, generously
A little lemon juice, added just before serving
Fresh parsley, added just before serving
Soak the Kalamata olives in water for about 10 minutes if you’d like to reduce some of the saltiness.
Refrigerate the salad until ready to serve, then finish with fresh lemon juice and chopped parsley.
🌿 3. Spinach & Feta Savory Biscuits
200 g spinach
75–90 g feta cheese
1 1/4 cups almond flour
2 eggs
1 tsp baking powder
1 tsp dried oregano
2 garlic cloves
1/4 tsp salt
Black pepper
A little lemon zest (optional)
Sauté the spinach until wilted, then squeeze out as much excess moisture as possible.
Bake at 350°F / 180°C for 20–25 minutes, until lightly golden.
🥒 4. Zucchini Fritters & Tzatziki
1 zucchini
1 tsp salt, for drawing out moisture
1/2 cup chickpea flour
1 egg
1/4 cup Parmigiano Reggiano
A handful of fresh parsley
1 garlic clove
1 tsp baking powder
1/2 tsp salt
Black pepper
1 Tbsp olive oil
Directions
Grate the zucchini, mix with 1 tsp salt, and let it sit for 10 minutes. Rinse once, then squeeze out as much moisture as possible.
These are best enjoyed warm.
Tzatziki
1/2 cucumber
1/2 cup Greek yogurt
Fresh dill
1/2 tsp salt
Black pepper
A little lemon juice
🍆 5. Eggplant Beef Rolls
4 eggplants, peeled in alternating strips
400 g ground beef
2 bell peppers
1 onion
4 garlic cloves
2 mild green peppers
1 1/2 tsp cumin
1 tsp red pepper flakes
1 tsp salt
Black pepper
1 Tbsp olive oil
If using lean grass-fed beef, keep the vegetable juices and add 1 Tbsp olive oil to help keep the filling moist as the recipe says. If using regular ground beef, skip the olive oil and drain a little of the excess liquid from the vegetables.
Brush both sides of the eggplant slices with olive oil before cooking, and season with salt just before they go into the pan.
Tomato Sauce
Extra virgin olive oil, generously
1 1/2 Tbsp tomato paste
60ml water (more water if you like thinner consistency)
Spoon the tomato sauce evenly over the eggplant rolls and bake at 350°F / 180°C for 30 minutes.
Spread some tzatziki (or plain yogurt) onto the plate, arrange the eggplant beef rolls on top, and finish with fresh parsley.
You can also shape some of the leftover beef mixture into meatballs and bake them alongside the rolls.
