Recipe:
2 eggs 🥚🥚.
A pinch of salt.
1 tsp vanilla sugar or vanilla extract.
120 g sugar (3/5 cup / 4.2 oz).
Beat with a mixer for 2-3 minutes.
Mix well until the mixture is creamy.
80 ml sunflower oil (1/3 cup / 2.7 fl oz).
120 ml milk (1/2 cup / 4 fl oz).
220 g flour (1 3/4 cups / 7.8 oz).
Add the flour in two stages so that the dough mixes better.
1 tsp baking soda (5 g / 0.17 oz).
Mix well.
Mix everything well until the dough is smooth.
Grated zest of one lemon.
4 tbsp desiccated coconut (30 g / 1 oz).
2 apples.
22 cm (8.6 inch) springform pan.
Grease the baking tin with butter so that the baking paper stays in place.
Bake for 45–50 minutes at 180°C (356°F).
Apricot jam for garnish.
Sprinkle with coconut flakes.
