Today, we’re making a truly special apple cake: cloud-soft, light, and incredibly easy to prepare! To keep it light, I’ve cut the butter in half and swapped it for Greek yogurt... making the cake so much softer and airier!

📝 INGREDIENTS
👉🏻Batter:
2 eggs
80g sugar
50g softened butter
50g Greek yogurt
150g all-purpose flour (or rice flour)
1/2 packet baking powder (approx. 8g)
Vanilla (or vanilla extract)
Grated zest of 1 lemon
👉🏻Topping:
2 apples (crisp variety, e.g., Pink Lady)
Juice of 1/2 lemon
A pinch of sugar
Walnuts (optional)
Raisins (soaked in water, orange juice, or rum) (optional)
1 teaspoon powdered sugar + cinnamon (optional)

Apricot jam diluted with a little water or orange juice
Powdered sugar for dusting the edges
