The BEST Shrimp Pesto Pasta with Spinach (Easy 20-Minute Dinner!)
Looking for a quick, easy, and incredibly flavorful weeknight dinner? This Shrimp Pesto Pasta with Spinach is the answer! With Jamie out of town (he's not a big pesto fan!), I decided to make one of my personal favorites that I haven't cooked in forever. This dish is packed with vibrant flavors from basil pesto, garlic, sweet cherry tomatoes, and tender shrimp, all tossed together with fresh spinach.
This is the perfect "cook for one" meal that leaves you with delicious leftovers, but it's also impressive enough to serve to guests. It comes together in about 20 minutes and is super easy to customize with your favorite ingredients.

► 12 oz Pasta (we used Rotini, but spaghetti or penne work great!)
► 1 lb Shrimp, peeled and deveined (cooked or uncooked)
► 3/4 cup Basil Pesto
► 1-2 cups Cherry or Grape Tomatoes
► 3 cups Fresh Spinach
► 2 cloves Garlic, minced (or a healthy spoonful of pre-minced!)
► 1 tbsp Olive Oil
► 1/4 cup Parmesan Cheese, shredded or grated
► Fresh Basil for topping (optional)
► Salt & Pepper to taste
► ~1 cup Reserved Pasta Water

💡 Change the Protein: Not a fan of shrimp? This pasta is amazing with grilled chicken, or you can use tofu for a vegetarian option.
💡 Vary Your Veggies: Don't like tomatoes or spinach? Feel free to leave them out or substitute with other veggies like sun-dried tomatoes, roasted red peppers, or zucchini.
💡 Pick Your Pasta: We love how the pesto clings to rotini, but feel free to use your favorite pasta shape!
