The best cake in the world! The most delicious Norwegian cake (Verdens beste)
Today we're baking a true Norwegian legend – Verdens bestens Kuchen, which translates as "The Best in the World." It's also called Kvæfjordkake, and not for nothing: a delicate sponge cake, airy meringue with almonds, and cream with vanilla notes create the perfect balance of flavor and texture. This cake has become Norway's national pride and will now also be found in your kitchen. Let's prepare a dessert together that has captured the hearts of millions!
✅ Vanilla cream (1 part)
80 g sugar.
1 teaspoon vanilla sugar or ½ teaspoon vanilla extract.
40 g cornstarch (3 tbsp).
1 egg.
Mix well.
350 ml milk.
Add gradually in small portions, stirring constantly.
Cook over medium heat, stirring, until the cream thickens (2–3 minutes after boiling).
Once the cream is thick and smooth, remove from heat.
50–70 g butter (depending on desired satiety).
Stir well until everything is well blended.
Pour the cream into a clean bowl.
Cover with cling film to prevent a skin from forming.
Allow to cool completely in the refrigerator.
✅For the dough:
100 g soft butter.
100 g sugar.
Beat butter and sugar until creamy.
4 egg yolks.
Add the egg yolks one at a time.
2 tablespoons milk.
100 g wheat flour.
1 teaspoon baking powder.
Knead into a soft dough.
Place in a rectangular baking dish (approx. 25 x 35 cm) lined with baking paper.
✅For the meringue:
4 egg whites.
Beat until fluffy.
1 teaspoon vanilla sugar.
150 g sugar.
Add gradually in small portions while stirring.
Beat egg whites until frothy.
Spread evenly over the dough.
Sprinkle with 2-3 tablespoons of almond flakes.
Bake in a preheated oven at 170°C for 30-35 minutes until golden brown.
Allow to cool completely.
✅Vanilla cream (part 2).
150 ml cold cream 33%.
Whip the cold cream until stiff.
Carefully fold into the already cold cream using a silicone spatula.
If necessary, mix with a mixer on low speed.
✅Assembling the cake:
Cut the cooled cake in half lengthwise.
Spread cream on the bottom layer and cover with the second layer.
Let cool for 1 hour if desired.
Sprinkle with powdered sugar.
