Pancetta (or smoked bacon)
All-around seasoning mix
Paprika
Black pepper
Gruyère cheese (thinly sliced)
Monterey Jack cheese (chunks)
Cream cheese (½ block)
Heavy cream (about ⅓ cup)
Parmesan cheese (2–3 teaspoons)

- Chop garlic, onion, and spinach.
- Cook pancetta (or bacon) until crispy. Remove.
