📋 INGREDIENTS:
For the meat:
• 1 kg (2.2 lbs) beef shoulder or beef rump, roast beef neck/rib, from young bulls cut into large cubes
• Salt and pepper
• 3 tablespoons of flour
• 3 tablespoons olive oil
• 200 g (7 oz) bacon cubes
• 2 onions, roughly chopped
• 3 garlic cloves, finely chopped
• 2 carrots, sliced
• 250 g (9 oz) mushrooms, quartered

For the sauce:
• 750 ml (3 1/4 cups) red wine (e.g. Burgundy)
• 250 ml (1 cup) beef stock
• 2 tablespoons tomato paste
• 2 tablespoons butter
• 2 bay leaves
• 2 sprigs of thyme
• 1 teaspoon of sugar
• 1 tablespoon butter for binding
