• 600g beef fillet (approx. 1.3 pounds)
• Salt, black pepper
• 2 tbsp olive oil
• 1 tbsp butter
• 1 sprig of rosemary
Celery puree:
• 400 g celeriac (14 oz)
• 100 g potatoes (3.5 oz)
• 30 g butter (2 tbsp)
• 100 ml milk (½ cup)
• Salt, nutmeg
Red wine sauce:
• 1 shallot, finely chopped
• 200 ml red wine (¾ cup)
• 200 ml beef stock (¾ cup)
• 1 tsp tomato paste
• 1 tsp butter
Glazed carrots:
• 300 g small carrots (10 oz)
• 1 tbsp butter
• 1 tsp honey
