
The BEST Beef Stew Recipe | Braised Beef with Carrots
Ingredients
• 900 g boneless beef short ribs (or any stewing beef)
• 3 carrots
• 1/2 onion
• 20 g ginger
• 5 bay leaves
• 1 star anise
• 1 cinnamon stick
• Scallions (optional)
Blanch the Beef
• Start beef in cold water with 10 g ginger and 1 tbsp rice wine.
• Bring to a boil and skim off the foam.
Sauce
• 2 tbsp light soy sauce, 1 tbsp rice wine
• 1/4 tsp dark soy sauce, 1 tsp oyster sauce
• Mix well.
Stew
• Heat oil over medium-low. Melt 1 tbsp rock sugar until amber.
• Add beef; sear until golden.
• Add ginger, star anise, bay leaves, and cinnamon; stir till fragrant.
• Pour in the sauce, then add onion.
• Add 1 L hot water (just cover the beef). Bring to a boil, then simmer 60 min(or pressure cook 20 min, then return to the pot).
• Add carrots; simmer 20 min more.
• Season with 1/8 tsp salt, finish with scallions.
💡 Tip: 1 tsp = 5 ml · 1 tbsp = 15 ml
