Ingredients for 2 people:
For the beef fillet:
• 2 pieces of beef fillet, approx. 180 g each (approx. 6.3 oz each)
• 1 tbsp coarse mustard
• Rosemary
• Thyme
• Salt, pepper
• 1 tbsp vegetable oil
• 1 tbsp butter

For the red wine shallots:
• 4 shallots, halved
• 150 ml red wine (approx. ⅔ cup)
• 1 tsp brown sugar
• 1 tsp balsamic vinegar
• 1 tsp butter
• Salt, pepper

For the parsnip puree:
• 300 g parsnips, peeled and diced (about 2 cups)
• 1 small potato, diced
• 100 ml cream or milk (approx. ⅓ cup + 1 tbsp)
• 20 g butter (approx. 1 ½ tbsp)
• Salt, nutmeg
