For the steak:
3 beef tenderloin steaks, about 220 to 250 g each (7.8 to 8.8 oz)
1 tsp salt
1/2 tsp black pepper
1/2 tsp coarsely ground black pepper
2 tbsp vegetable oil
30 g butter (2.1 oz)
2 garlic cloves, lightly crushed
2 sprigs of thyme or rosemary

For the dark red wine butter sauce:
2 shallots, very finely chopped
1 garlic clove, finely chopped
1 tbsp butter
1 tsp tomato paste
250 ml dry red wine (8.5 fl oz / about 1 cup)
200 ml beef broth or strong stock (6.8 fl oz / about 3/4 cup)
1 tsp honey
1 tsp balsamic vinegar
1 tsp soy sauce
1/2 tsp black pepper
20 g cold butter (0.7 oz)

For the creamy mashed potatoes:
800 g starchy potatoes (28.2 oz)
70 g butter (2.5 oz)
150 ml warm milk or cream (5 fl oz / about 2/3 cup)
1/2 tsp salt
1 pinch of nutmeg
black pepper to taste

For the green beans:
350 g green beans (12.3 oz)
20 g butter (0.7 oz)
1 garlic clove
Salt
black pepper

For garnishing:
1 tbsp pine nuts or slivered almonds
some fresh thyme
some finely chopped chives or parsley
