Buckwheat noodles are a good staple food for weight control. Usually, the store bought buckwheat noodle contents very low percentage of buckwheat. It is actually very simple to make them at home. You can also increase or decrease the proportion of buckwheat according to your taste. Buckwheat is not chewy, so it needs flour. Here we can use bread flour to make it chewier and less likely to break. I usually like a 4:6 ratio of flour to buckwheat flour. Some people also like a 3:7 ratio.荞麦面作为减脂期主食是非常不错的,通常市面上的荞麦面荞麦含量很低,自己在家做其实很简单,还可以按照自己的口感增减荞麦比例,荞麦是没有劲性的,所以需要借助面粉,这里咱们可以用高筋面粉更劲道且不容易断,面粉和荞麦粉的比例我通常喜欢四六比例,有些人也喜欢三七比例,这个看自己的口味调整。

石磨荞麦粉 300g stone-ground buckwheat flour
有机高筋面粉 200g organic bread flour
清水 205-210g water
海盐 5g salt
