在春末夏初,深山里的苦笋开始萌芽,我尤其迷恋它的味道,相比于普通竹笋,多了一种像花儿一样的迷人清香,因此每年的这个时候都成了我的期盼,雨后的苦笋长势很快,今天和爷爷挖了一箩筐回家做了一顿苦笋料理,吃完的那一刻真会感恩大自然的馈赠。

Summer is coming! I climbed the mountain to dig the bitter bamboo shoots. The bitter bamboo shoot has charming fragrance like a flower compared with the normal bamboo shoots. The bitter bamboo shoots grow quickly after the rain. Today I dug a basket with my grandpa and made several meal of bitter bamboo shoots. The moment I ate, I was grateful for the gift of nature.

①三鲜砂锅米线 Casserole Rice Noodles
记忆中的三鲜砂锅米线是我学生时代非常爱吃的食物,天冷的时候尤其爱吃,配上一碗蘸水就会吃得非常满足,一身都能暖起来。

食材(一人份)/Ingredients (for one person):
中等番茄 一个 One Medium Tomato
干黄花菜 15g Dried Day Lily
木耳 20g Woodear Mushroom
黄豆芽 25g Soy Bean Sprouts
苦笋 50g Bitter Bamboo Shoots
香菇 两朵 Two Shiitake Mushrooms
平菇 40g Pleurotus Ostreatus
胡萝卜 25g Carrot
干豆皮 一小块 A Small Piece of Dried Bean Curd
香菜 适量 Coriander to Taste

调味料/Seasoning:
生抽 1.5大匙 1.5 tbsp light soy sauce
香菇素蚝油 一小匙 1 tsp of vegan oyster sauce
赤砂糖 ½小匙 Brown sugar ½ tsp
香醋 一小匙 1 tsp of black vinegar
花椒油 ½小匙 Sichuan pepper oil ½ tsp
油辣子 一小匙 1 tsp of spicy oil
海盐 适量 Salt to taste
香菇昆布高汤 800ml kombu broth

做法/Method:
昆布10cm*10cm Kombu 10cm*10cm
干香菇3朵 3 dried shiitake mushrooms
纯净水 1升 Pure water 1 liter
步骤:昆布和香菇用厨房纸擦去灰层,然后加水浸泡一晚上。将浸泡好的香菇和昆布连同水一起倒入锅中,然后开最小火慢慢煮,水开前将昆布取出,否则容易煮出海带的黏液和腥味,捞出后继续煮5分钟,然后过滤即可 。
Procedure: Use kitchen paper to wipe off the dirt of kombu and shiitake mushrooms, then add water to soak overnight. Pour the soaked shiitake mushrooms and kombu together with water into the pot, then turn on the minimum heat and cook slowly. Remove the kombu before the water is boiled. After removing it, continue to cook for 5 minutes, then just filter.


②酸腌苦笋/Pickled bitter bamboo shoots
食材/Ingredients:
苦笋 200g Bitter bamboo shoots
甜椒 半个 Half bell pepper

调味料/Seasoning:
米醋 三大匙 3 tbsp rice vinegar
赤砂糖 三大匙 3 tbsp Brown sugar
泡菜水 5大匙 5 tbsp pickle juice
花椒 一小匙 A teaspoon of Sichuan pepper

③笋衣炒饭/Fried rice with bamboo shoots
食材/Ingredients:
苦笋笋衣 50g Skin of bitter bamboo shoots
毛豆 30g Edamame
宜宾芽菜 一小匙 1 tsp of Yibin Yacai
胡萝卜 30g Carrot
冷米饭 一碗 A bowl of cold rice
香菇 一朵 One Shiitake mushroom

调味料/Seasoning:
生抽 两小匙 2 tsp of light soy sauce

④烧椒苦笋/stir fried bitter bamboo shoots with bell pepper
食材/Ingredients:
二荆条辣椒 4-8根 4-8 long green peppers
苦笋 250g Bitter bamboo shoots

调味料/Seasoning:
生抽 一大匙 1 tbsp of light soy sauce
赤砂糖 ½小匙 Brown sugar ½ tsp
昆布粉 ¼小匙 Kombu powder ¼ tsp
香油 一小匙 1 tsp of sesame oil
辣椒油 一小匙 1 tsp chili oil
