Ingredients/材料:
荞麦面/Soba:
荞麦粉 160g Buckwheat Flour
中筋面粉 40g All Purpose Flour
(荞麦粉和面粉比例我用的 4:1) (I used 4:1 as the buckwheat flour to flour ratio)
盐 2g Salt
冷水 90g Cold Water
昆布高汤/Kombu Broth:
昆布 8*8cm Kombu/Kelp/Seaweed
纯净水 800ml
调味料/Seasonings:
冰昆布高汤 80ml Ice Kombu Broth
生抽 1大匙 1Tbsp Soy Sauce
味淋 1大匙(可选) 1 Tbsp Mirin (Optional)
枫糖浆或糖 1小匙 1Tsp Maple Syrup or Sugar
芥末酱 适量 Mustard Sauce
熟芝麻 适量 Cooked Sesame
海苔丝 适量 Seaweed
豆乳荞麦面/Soy Milk Soba:
食材/Ingredients:
荞麦面 100g Soba Noodles
黄瓜丝 适量 Sliced Cucumber
纯素辣白菜 1大匙 1 Tbsp Vegan Kimchi
豆腐泡 3个 3 Fried Tofu
甜玉米 两大匙 2 Tbsp Corn
熟芝麻 适量 Cooked Sesame
调味料/Sesonings:
冰豆浆 200ml Ice Soy Milk
昆布高汤100ml Kombu Broth
生抽 2小匙 2 Tsp Soy Sauce
香油 1小匙 1 Tsp Sesame Oil
海盐 适量 Salt
