
「素食」芋頭腐竹味噌湯|【Vegan】Taro & Yuba Miso Soup
上次有小伙伴問我有沒有不加菌子的湯,我想芋頭湯還不錯......有時候並不是想大吃一頓,用簡單的食材用心去烹飪,一樣也能吃得很幸福,正好最近天氣冷了,這碗喝下去整個人都會暖起來的湯送給大家~
Ingredients/材料:
芋頭 420g Taro 420g
鮮腐竹 60g Fresh yuba 60g
豌豆尖 一把 Handful of pea tips
生薑末 3g 3g Minced ginger
枸杞 幾顆 A Few Goji berry
調味料/Seasoning:
橄欖油 一大匙 A tablespoon of olive oil
白味噌 一大匙 A tablespoon of white miso
昆布粉 ½小匙 Kelp powder ½ tsp
香菇蠔油 一小匙 A teaspoon of vegan oyster sauce
開水或素高湯 800ml Boiling water or vegetarian stock 800ml
玫瑰鹽或海鹽 一小匙 A teaspoon of rose salt or sea salt
Tips:
芋頭一定要事先浸泡去除過多黏液,這樣湯才不會太黏更清爽同時更入味。
Make sure to soak the taro in water to remove the slippery substance, so the soup will be clear and refreshing. If you prefer thick soup, skip this step.
