Braised Noodles with beans is really a very popular home-cook dish. I used homemade noodles in this dish, and it bring this classic dish to the next level.
豆角焖面真的是非常经典受欢迎的家常菜,但面条真的很有讲究,有条件一定要自己做,你会发现味道上升不止一点,面条更劲道弹牙,口感层次更丰富,妥妥的就能嗦一大碗。
Ingredients/材料:
📒面条/Noodles:
中筋面粉 300g All Purpose Flour
水 130g Water
海盐 2.5g Salt
碱面 0.7g Dietary Alkali (or Baked baking soda)
(面粉和水的比例 0.43%~0.44% / Flour to Water ration is 0.43~0.44)
📒食材/Ingredients:
豆角 150g Cowpea Beans
香菇 1朵 Shiitake Mushroom
蟹味菇 30g Beech Mushroom
胡萝卜 60g Carrot
生姜 4g Ginger
花椒 8粒 8 Sichuan Peppercorn
📒调味料/Seasonings:
生抽 1大匙 1 Tbsp Soy Sauce
素蚝油 2小匙 2 Tsp Vegan Oyster Sauce
纯番茄酱 2大匙(如果是加了糖那种要减量) 2 Tbsp Tomato Sauce
海盐 适量 Salt
五香粉 ¼小匙 1/2 Tsp Five Spice Powder
赤砂糖 ½小匙 1/2 Tsp Brown Sugar
