In addition to Chongqing xiaomian, there is another specialty noodle dish - Pea Sauce Noodles. This noodle dish is usually paired with chili peppers and rich seasonings.
除了重庆小面,重庆还有另一个特色面食——豌杂面,豌杂面通常以干馏为主,配料以豌豆和炸酱为主,搭配以辣椒和丰富的调味料,面条拌匀后每一根都裹上豌豆的软糯和炸酱的鲜甜,还有红彤彤的油辣子,简直巴适的不行。

Today I made a homemade vegan version of it, and the taste is very good. If you like noodles, you must try it!
我今天用素食还原了家庭版豌炸面味道也一级棒,一定要试一试!

📒食材/Ingredients:

碱水面 100g(一定要新鲜碱水面才有灵魂)Alkaline noodles (the key to tasty noodles)
豌豆尖 一把 Pea tips
豌豆罐头 1盒 One Can of Peas
香菜 一根(喜欢葱可放葱)One Stick of Cilantro (or green onion if you prefer it)

📒炸酱/Sauce:
老豆腐 250g Firm Tofu
黑木耳 几朵 A Few Woodear Mushrooms
香菇 3朵 3 Shiitake Mushrooms
杏鲍菇 半根(80g) Half King Oyster Mushroom (About 80g)
姜末 4g Minced Ginger
郫县豆瓣 1大匙 1 Tbsp Pixiandouban
甜面酱 2大匙 2 Tbsp Tianmianjiang
生抽 1大匙 1 Tbsp Soy Sauce
老抽 1小匙 2 Tsp Dark Soy Sauce
五香粉 ¼小匙 1/4 Tsp Five Spice Powder
糖 ½小匙 1/2 Tsp Sugar
海盐 适量 Salt
水淀粉 适量 Starch slurry

📒打料/Sides:
油辣子 1大匙 1 Tbsp Chili Oil
生抽 2小匙 2 Tsp Soy Sauce
香醋 一丢丢 A Bit Black Vinegar
花椒面 ½小匙 1/2 Tsp Sichuan Peppercorn Powder
芝麻酱 1小匙 1 Tsp Sesame Paste
昆布粉 ¼小匙 1/4 Tsp Kombu Powder
香油 2小匙 2 Tsp Sesame Oil
榨菜碎 1大匙 1 Tbsp Chopped Zhacai
姜蒜水 3大匙(蒜和姜比例2:1,加热水浸泡)3 Tbsp Ginger-Garlic Water (2 part garlic with 1 part ginger, soaked in hot water)
