天气渐暖,年后适合吃一点清爽的凉拌菜解腻,我首推这道炝拌大白菜丝,吃起来真的特别清爽水润,加入一些卤煮过的千张增加风味和口感简直能干两碗饭。

Ingredients/食材:
白菜帮 8-10片 Eight to Ten Napa Cabbage Ribs
千张 一大张 (30cm*25cm) Dried Beancurd Strip
香菜 两株 Two Corianders
干二荆条 6个 Six Dried Long Chili Pepper
干朝天椒 2个 Two Dried Red Chili Pepper
大红袍花椒 10粒 About 10 Sichuan Peppercorn
姜末 3g Minced Ginger
菜籽油 适量 Vegetable Oil

调味料/Seasonings:
糙米醋 2大勺 2 Tbsp Brown Rice Vinegar
赤砂糖 1.5小勺 (7.5g) Brown Sugar 1.5 Tsp (7.5 gram)
生抽 1大勺 1 Tbsp Soy Sauce
香油 1小勺 1 Tsp Sesame Oil
盐巴 适量 Salt

Tips:
1. The fresher the napa cabbage, the better the salad tastes.
白菜尽量选择最新鲜的口感才够水润
2. Make sure to properly dry the cabbage shreds.
浸泡过的白菜丝一定要甩干水分,没有甩干机可以自然沥干
3. Skip the chili oil if you don't like spice.
不能吃辣可以只放炝过的辣椒油去掉辣椒节
