My friend surprised me with a large bag of green beans from the organic farm. My favorite method to cook green beans is to dry-stir-fry it. The Yibin Yacai(宜宾芽菜) can also gave extra flavor to the beans. This dish is definitely a rice killer.
朋友从有机农场给我寄了一大袋四季豆,对于爱吃四季豆的我真是开心极了,最爱的做法就是这个干煸四季豆,一定要加点宜宾芽菜,味道特别下饭,一定要试试!

Ingredients/材料:
四季豆 400g Green Beans
宜宾芽菜 40g Yibin Yacai
干辣椒 10-15个 Dried Chili Pepper(About 10 to 15)
青花椒 3g Green Peppercorn
生姜 5g Ginger

调味料/Seasonings:
生抽 1大匙 1 Tbsp Soy Sauce
素蚝油 1小匙 1 Tsp Vegan Oyster Sauce
赤砂糖 1/2小匙 1/2 Tsp Brown Sugar
盐 适量 Salt

Tips:
1. Add salt at first step, otherwise, the green beans will taste plain, and make sure to cook the green beans until it turns soft with the exterior becoming slightly charred and wrinkled.
一定要提前加盐,否则四季豆没味,注意要煸到变软至起皱,不然会容易食物中毒哦
2. Use low heat when cooking the seasonings.
炒料时保持小火,料头炒糊了就没什么香味了。
3. Yibin Yacai is very salty. Soak it in water in advance before using it. If you can't find Yibin Yacai at your local grocery stores, you can replace it with any type of preserved vegetables, such as zha cai, mei cai or xue cai.
芽菜比较咸,后续加调料会更咸,所以一定要过两遍水,没有也可以用梅干菜、或是榨菜、雪菜之类的咸菜
