Pancake,美式松餅,是一種用烘焙泡打粉或酵母混合麵粉(或玉米粉,蕎麥麵粉),水,牛奶,雞蛋或淡啤酒做成的麵糊,放在平底鍋裏煎熟的扁狀餅,通常在上面凃抹奶油,果醬,糖漿或肉類等東西一起吃。這個視頻介紹的日式舒芙蕾Pancake,材料簡單,沒有添加泡打粉,靠打發蛋白來使其變得蓬鬆,只添加的少量的麵粉,口感非常柔軟。由於沒有泡打粉,通常做好后很快就會塌下來。
Pancake use baking powder or yeast mixed flour (or corn flour, buckwheat flour), water, milk, eggs or light beer, fry in a pan. Pancake are usually eaten with cream, jam, syrup or meat on top. The Japanese Souffle Pancake introduced in this video has simple materials. No baking powder is added. It is made fluffy only by egg whites and with a little bit flour added, so the taste is very soft. Because no baking powder, it usually sank in soon after it is done.

15g牛奶(或杏仁露,豆奶)
5g蔬菜油
20g低筋麵粉
5g玉米澱粉
2個蛋白
20g糖
1/4茶匙檸檬汁

Recipe:(3 pieces)
1 egg yolk
15g milk(or almond milk, coconut milk)
5g vegetable oil
20g pastry flour
5g corn starch
2 egg whites
20g sugar
1/4tsp lemon juice
