Easy Cheesy Chicken Broccoli Rice Casserole Recipe

If I look a little tired today, it is because I am. Kira has had a tummy ache the past two days and Jamie and I have been up all night with her. She is doing a lot better today, but because of that, the big recipe I had planned is just too much work. Plus we are heading out for the Novi Pet Expo in Novi Michigan this week! So instead, I am making absolute comfort food that my mom used to make for us kids. It is cheap, easy, and so incredibly good.

We are making cheesy chicken rice casserole. You are probably wondering where the broccoli is! I am actually not a huge fan of broccoli, so I use green beans instead and it works perfectly. This classic Midwestern style dish is creamy, cheesy, and ridiculously simple because you just mix everything right into your baking dish. It is a fantastic one pot meal that you can prep quickly, toss in the oven, and feed the whole family. Plus it freezes incredibly well!

Ingredients
1 small can of drained green beans or 1 cup chopped steamed broccoli
1 can of cream of chicken soup
1 can of instant white rice
Half a soup can of milk
Half a soup can of chicken broth
Half a pound of cooked chicken
1 cup of shredded cheese
Canned cranberry sauce for serving

Tips and Tricks
✨ You can easily double this recipe for a whole family by using full cans of everything and baking it in a bigger dish with a lid.
🥘 This meal freezes really well so you can make a big pan, freeze it in little containers, and just reheat it later.
🍄 Customize your veggies by swapping the green beans for broccoli or mushrooms.
🍗 Use leftover rotisserie chicken to make this weeknight dinner even faster.
🧀 Mix and match your shredded cheese using Colby Jack, mild cheddar, sharp cheddar, or even pepper jack.
🍚 Try using instant brown rice instead of white rice if you prefer it.
🥣 Mix different soups together like cream of mushroom or cream of bacon when you make a bigger batch.

🐾 Eleanor was holding down the fort in the kitchen today, doing her best to fill the shoes of our best kitchen helper ever, Memphis, who we miss so much.
🐾Kira was still recovering from her tummy ache but she definitely perked up when it was time for the greeny greeny beanie beanie song!
🐾Both of the girls gladly accepted their pieces of chicken. And of course, we had to pay the cheese tax.
🐾Eleanor got hers right in the kitchen, and Her Royal Highness Kira received her cheese delivery straight to the couch!
