Hi guys! Welcome to Alice's Yummy Food and in today's episode
I'll show you how to make amazing Latvian-style fried potatoes.
Now, in England they call them chips, but in Latvia we call them fries.
Whatever you want to call them, they're just so, so delicious.
It's not the healthiest recipe in the world,
but it's very, very good. It's so tasty.
In Latvia, they serve them in this really famous place called Lido.
And if any of you have been there, you'll know what I'm talking about.
Let's get started!
We will start off with peeling our potatoes.
So after you peeled your potatoes,
the next thing we're going to do is chop them up.
Now you can do it the traditional way,
just cutting the slices and cutting the little
stripes, but I actually got this for Christmas from a good friend,
and it's a really cool
master slice, and what it does,
it just does all the work for you, so really really quickly,
you just put that in, and just put
that in like that, press, and it's done.
Okay, so the potatoes are done, so let me take that off.
See, that's all there sliced up for you.
So the next thing we're gonna do, we're just gonna get a large skillet
and put a bit of butter and we're just gonna wait till that melts.
I also like to put a bit of oil
and the first thing we're gonna do is actually
fry the onions.
So I've chopped them up really finely.
Our onions are getting nice and brown,
so the next thing we're going to add is bacon lard.
Now in Latvia we actually use salo, which is pork fat,
but I couldn't really find any here,
so I'm just gonna have to use this.
But it's still gonna be really really delicious,
don't you worry. I'm just gonna mix that in and fry it together.
At last I'm going to add my chopped potatoes
and you can see they're all the same size
and you don't have to spend ages so this is a really,
really great tool which I've been
using a lot lately.
I'm quite lazy now since I've got all this technology.
Just going to put that all in there and we're going to mix it in.
And actually we're just going to leave it.
We want the potatoes to get a really, really nice brown, golden colour.
A bit even like crunchy, crispy and burnt kind of effect.
Just going to leave them on, up the heat, mix it all in.
So you can see the potatoes are starting to get quite cooked and soft.
We want to keep mixing just a bit, making sure they don't burn.
And they're rolling in the house, which is good.
So again, I'm just going to leave it like that for a few minutes
and then mix again.
Okay, I think it's ready for my egg,
so this is looking really good.
All I'm going to do now is take my egg out because
it's getting too cooked and I like it quite raw.
Oh yeah, look at that beautiful fried potato and my beautiful egg.
I love eggs, what can I say? I'm weird.
Anyway, I'm going to try this now.
I've just been waiting.
Wow, that is so good.
The potatoes have the flavor of the bacon
but you definitely can't taste the onion but it's
still there and it adds that extra flavor that it's just so delicious.
They're soft yet crispy
on the inside. Look at that.
It's quite a filling dish so I would eat this in the morning.
So, you know, you can burn all the calories.
Guys, really, really hope you try this.
It's very, very traditional.
It's considered as the poorest people food in Latvia.
And, you know, we used to eat it all the time.
It was great.
It's cheap and it's very, very tasty.
Thank you so much for watching.
Please give me a thumbs up, share the video
and I'll see you next week.
Bye.
