30 g (1.1 oz) grated parmesan
1 garlic clove
Some grated organic lemon zest
A bit of lemon juice
Salt and black pepper
For the bread and garnish:
8 large slices of baguette or other bread of your choice
1 handful of cherry tomatoes
A bit of olive oil
8 mini mozzarella balls, drained
Fresh basil
8 short wooden skewers
For the meat:
2 pork tenderloins, about 1 kg (2.2 lb) total
A bit of olive oil or other vegetable oil for frying
1 tbsp butter
2 smashed garlic cloves
2 to 3 sprigs of thyme
Salt
For the sauce:
100 ml (3.4 fl oz) vegetable broth, or beef broth alternatively
1 tbsp dark balsamic vinegar
1 tbsp honey
Salt and black pepper
PREPARATION
1. Roast the peppers
Wash, seed, and quarter the bell peppers.
Place them skin-side up on a baking sheet.
Roast in a preheated oven at 230 °C (446 °F) for about 25 minutes.
The skin should get dark spots and blister.
Place the roasted peppers in a bowl, cover, and let them rest for 10 minutes.
Then peel the skin off and slice the peppers into strips.
2. Prepare the ricotta-parmesan cream
Place the ricotta in a bowl.
Press 1 garlic clove through a press or finely grate it and add it.
Grate some lemon zest in and add some lemon juice.
Add the grated parmesan.
Season with salt and pepper and mix everything well.
Refrigerate until serving.
3. Toast the bread and tomatoes
Slice baguette or other chosen bread into 8 large slices.
Place the bread slices on a baking sheet and add a handful of cherry tomatoes.
Drizzle the bread and tomatoes with a bit of olive oil.
Toast in a preheated oven at 180 °C (356 °F) for about 12 minutes.
Then remove.
4. Marinate the peppers
Cut some basil leaves into strips and add them to the peeled peppers.
Press 1 garlic clove through a press or finely grate it and add it.
Add 1 tsp balsamic vinegar and 1 tbsp olive oil.
Season with salt and pepper and mix well.
5. Sear the pork tenderloin
If necessary, remove the silverskin from the pork tenderloin and pat dry.
Cut into 8 evenly sized medallions as much as possible.
Season the meat well with salt on both sides.
Heat some oil in a pan.
Sear the medallions until golden brown on all sides.
Reduce the heat and add 1 tbsp of butter, 2 smashed garlic cloves, and 2 to 3 sprigs of thyme.
Spoon the aromatic butter and drippings over the meat multiple times.
Remove the medallions and place them in a baking dish.
Finish cooking in the preheated oven at 180 °C (356 °F) for about 8 minutes.
The exact cooking time depends on the thickness and previous searing. Check the doneness preferably with a meat thermometer.
Let rest for about 5 minutes afterward.
6. Prepare the balsamic-honey sauce
Remove the garlic and thyme from the pan.
Add 100 ml (3.4 fl oz) vegetable broth to the pan and deglaze the fond while stirring.
Add 1 tbsp dark balsamic vinegar and 1 tbsp honey.
Mix well and let it reduce until the sauce is slightly syrupy.
Finally, season with some salt and pepper.
You can also use beef broth. I prefer vegetable broth because it has a milder taste and does not overpower the flavors of the other ingredients.
7. Serve
Spread the roasted bread slices with the ricotta-parmesan cream.
Let the marinated pepper strips drain a bit and spread them on top.
Place 1 pork medallion on each.
Drizzle with a little balsamic-honey sauce.
Skewer 1 roasted cherry tomato and 1 mini mozzarella ball onto a short wooden skewer.
Insert the skewer through the medallion into the bread.
Garnish with fresh basil and serve immediately.
This dish is incredibly delicious.
You definitely have to try it!
