What you need:

For the gnocchi:
1 cup pumpkin puree
1/2 tsp salt
1/2 tsp pumpkin pie spice
tablespoon brown sugar
1-1 1/2 cups flour

To serve:

3 tablespoons butter
1 cup kielbasa sausage, sliced
1 recipe pumpkin gnocchi
3 tablespoons brown sugar
2 tablespoons your favorite hot sauce
Parmesan and parsley to serve

In a large bowl, mix together pumpkin puree, salt, pumpkin pie spice, 1 TBL of your brown sugar and 1 cup of flour. Once mixed, flour a cutting board and dump your dough onto it. Add enough flour until a loose dough forms.

Divide dough by four. Roll out 1/4 dough at a time into long longs. Cut logs down into bite sized dumplings, about 1/2 inch in length. Flour a fork and drag each dumpling down the length. Place finished dumplings onto a floured baking sheet as you make the rest.

Bring a large pot of water to a boil. Drop 4-6 dumplings in at a time, mixing so they don’t stuck to the water. They will float once cooked. Drain and place in a clean bowl. Repeat with the rest of your dumplings.

In a medium saucepan, fry kielbasa in the rest of your butter. Add cooked dumplings and toss while frying until they are lightly browned. Add in hot sauce and brown sugar and toss until glaze forms, a few minutes.

Plate while still warm. Garnish with parmesan and chopped parsley.
