More salt for top of pretzels
Pretzel Bath:
4 cups water
1/4 cup baking soda
Egg wash:
1 egg
2 tsp water
1. In a small bowl, add water, yeast, sugar and malted barley syrup. Mix to combine. Allow to get frothy, about five minutes.
2. In a large bowl combine flour and salt. Add yeast liquid and melted butter. Stir until a dough forms. Empty bowl onto a cutting board and kneed. You can also do this by machine. Don’t add more flour! Kneed for 8-10 minutes until smooth. Form into a ball and place in a bowl. Allow to rise until doubled in size about 1 1/2 to 2 hours.
3. Punch down dough and divide into eight equal pieces. Flatten out into a disc and place a little less than a tablespoon of cheese in the center. Fold over dough and roll into a small ball. Place finished balls one a parchment lined sheet.
4. Bring to a boil the water for the pretzel bath. Once its hit a boil, add baking soda and stir. Add dough balls and cook a minute or so each side. Drain and place back on baking sheet.
5. Slash three small gashes in each pretzel roll. Brush tops with egg wash. Sprinkle with salt. Bake in a 425 degree oven for 15-20 minutes until golden brown. Allow to cool a few minutes. Dip into extra nacho cheese if you wish.
