1 cup white rice
2 TBL coconut oil or butter
2 tsp turmeric
2 cups Veggie Broth
Goron Spice:
2 TBL curry powder
2 TBL garam masala
2 TBL chili powder
For Curry: Mix all Goron Spice spices in a small bowl. Keep in a sealed container, it will keep for a couple months. Season leg quarters with salt and 1 TBL of Goron Spice. Marinate in the fridge for at least half an hour.
In a large dutch oven or pot, heat up your coconut oil. Brown marinated chicken parts 5-8 minutes each side until nice and brown. Set aside in a clean bowl. Add onions, green chili and a pinch of salt and cook until lightly golden, 8-10 minutes. Turn the heat to medium and add your garlic and ginger stir a few minutes or until fragrant.
Spread your aromatics to the edges of the pan, add the last of your coconut oil and add 3 TBL Goron Spice to the fat. Bloom in the fat for a minute or two or until fragrant. Add tomato sauce and fry with the veggies about three minutes.
Add your water and scrape the bottom of the pan. Once it comes to a low boil, add your coconut milk. Stir in potatoes and bring to a low boil. Add reserved chicken parts. Cover and cook on low heat for 25 minutes. Remove the lid and cook on medium heat uncovered to allow sauce to thicken a little.
For Pilaf: In a small saucepan, melt coconut oil over medium heat. Add rice and cook in the fat until it smells nutty. Add in turmeric. Pour in veggie broth, bring to a low boil, cover and cook for about 20 minutes or until rice is cooked. Remove lid and fluff with a fork. To serve: Pour healthy portion of curry in a large bowl with pilaf. Garnish with chopped herbs. Serve immediately.
