Soma-kun lost his breakfast battle with this, but Apple Risotto real life recipe is a winner in my book. This, and all other Food Wars! Shokugeki No Soma elements are not my property, I'm just a hungry fan.
1/2 cup arborio rice 3 strips thick cut bacon 1/4 onion, minced 2 TBL butter 1 cup chicken broth 1 cup apple juice 2 TBL apple brandy or wine, optional 2 TBL parmesan cheese or white cheddar, optional Salt+Pepper to taste
Optional additions:
Pinch of tumeric, optional 1/4 tsp apple cider vinegar, optional Fresh thyme
The rest: 1 apple, diced 1 teaspoon lemon juice
First, peel, core, and dice your favorite apple. I’m using Fuji, but any sweet apple works. Place it in a bowl and add lemon juice to prevent it from browning and set aside. In a measuring cup, combine apple juice and chicken broth.
For the rice: cook three strips of bacon in the bottom of a dutch oven. Remove the bacon to a clean plate to drain, and use a paper towel to soak up any of the bacon fat from the bottom. Add your butter, your rice, and your onion. Cook on medium heat for five minutes or until the rice and onions are translucent.
Add half of your reserved liquid and bring to a boil. Once it’s boiling, turn heat to low, cover, and cook about 10 minutes or until most of the liquid has been soaked into the rice. Turn heat up to medium and add a little liquid, stirring it in until it is soaked in. You don’t have to stir it too much, but at least every couple minutes or so. Repeat until all liquid has been added and rice is cooked. Stir in parmesan cheese, reserved apples and white pepper to taste. You can use black pepper, but it will be speckled.
Before serving, consider adding the optional stuff, like apple brandy and apple cider vinegar. If it’s not as yellow as you’d like, add a little tumeric until the desired color is achieved. Serve on a plate and garnish with cooked bacon and fresh thyme.

Time for a breakfast battle.
Let's make apple risotto.
You'll need arborio rice.
Don't try using regular rice.
It's not going to work.
Grab your favorite apple and peel it.
We're going to dice it up.
Use whatever you like.
My favorite is Fuji, but any apple works.
Place your cubed apple into a bowl and add lemon juice.
Toss it to combine and set it aside.
In a big measuring cup goes chicken
broth, apple juice, and apple brandy.
You can leave out the brandy, or you can also use white wine,
or leave out the alcohol altogether.
In your favorite medium pot goes three slices of thick cut bacon.
Cook them until they're crispy,
then set them aside to drain.
Now, using tongs and napkins, clean the bottom of your pan so there's
nothing left. I would normally cook everything in this bacon fat,
but it's going to make the
risotto cloudy if we do that, and we don't want that.
Add your butter and melt it. Then add your
rice, and onions.
Stir and cook for about five minutes over medium heat until
the rice and the
onions are translucent.
As you can see, I overcooked mine, but it'll still be good.
All right, add half
of your liquid all at once. Bring to a boil,
then turn down the heat to low, cover, and cook for
about 10 minutes. Easy!
Now you can slowly add a little liquid at a time.
Don't add more until it's
soaked in. Do this in about three rounds.
Don't leave the stove. Risotto is easy, but not that
easy. Keep stirring so it doesn't stick to the bottom.
When it's done, it should look like this.
Super creamy! Let's finish it up.
Parm is traditional with risotto, but for this, I'm
going to use white cheddar. This risotto is good,
but I'm going to make it more yellow with turmeric.
See? Like a big bowl of sunshine.
Turn off the heat and add your apples.
Now season it to taste
with salt. I'm using white pepper instead of black,
so it won't add black specks to that lovely rice.
Use whatever you have though.
I'm going to add a little bit of apple cider vinegar too.
That's optional.
To serve, pile it up in your favorite bowl.
Furnish it with your reserved
bacon and a few sprigs of thyme.
Nice. Eat it while it's hot.
Apple risotto is yummy.
Thank you patrons, I love you.
