What You Need:
1/3 cup blackberry puree
1 TBL lime juice
3.4 oz bag of vanilla pudding mix
1 cup milk
1/3 cup blackberry puree
2 TBL powdered gelatin
1 1/2 cups heavy cream
1 sheet frozen puff pastry
Purple gel food color, optional
Egg wash (1 egg + 1 TBL cream)
Powdered sugar, blackberry jam and berries to serve
In a small bowl, combine berry puree, lime juice and gelatin. Allow to soak for five minutes.
Then melt in the microwave for 10 seconds at a time. Once melted, combine with milk and whisk to combine. Sprinkle on your vanilla pudding mix and mix. Set aside.
In a separate bowl, whisk your cream to stiff peaks. Whisk in 1/4 of your cream to lighten your pudding. Then, pour pudding over the remainder of the cream and fold until just combined.
Fold in food coloring at this point if you’d like. Press plastic onto the top of your cream and refrigerate until set, about 2 hours.
Rollout a piece of puff pastry to about 9 x 9 inch square. It doesn’t have to be exact. Punch rounds using a biscuit cutter or cup. You should get about nine per sheet used. Brush tops with egg wash.
Bake in a 400 degree oven for 15-20 minutes or until tops are golden brown and rounds puff up high. Allow to cool slightly.
To assemble: Slice pastry in half horizontally. Spread a little jam on the bottom half. Pipe on a good mound of your cream and top with the other half. Hit each round with powdered sugar and a few fresh berries.
