What You Need:
1 TBL powdered gelatin
1/2 cup water
2 TBL sugar
1 can ginger ale or clear soda
A few drops neon green gel color
1/2 pint raspberries
Place gelatin in your water and stir to combine. Allow to sit for five minutes or until stiffened.
Add ginger ale and sugar to a medium saucepan. Bring to a low boil. Add a drop or two of gel food color until bright neon green. Turn off the heat. Add gelatin and stir until dissolved. Pour into measuring cup with a pour spout.
Fill round molds halfway up the sides. Place in the fridge for 2 hours until semi-soft. Remove from fridge and press raspberries into the gelatin. Top off with remaining gelatin mixture. Refrigerate 2-4 hours more or until set.
To serve: dip molds in warm water for a second or two. Place bottom of a plate over the top and flip. Serve alone or with whipped cream.
