Fig Trees: Why They're NOT Ripening & Why You SHOULD Protect Them

Preparing for my upcoming demonstration at the Althouse Arboretum fig festival, I am addressing two of the biggest questions I get from growers this time of year: why figs aren't ripening and how to properly protect in-ground trees for the winter. Following late spring frosts that delayed development across my property, most varieties require roughly 90 days from pea-sized formation to full maturity, moving through distinct stages where growth pauses before final swelling. When harvesting, you should always judge maturity by feeling for softness at the neck rather than relying on skin cracking or honey at the eye, which often indicates rain damage. Gathering fruit right before heavy rains prevents them from becoming waterlogged and spoiling, preserving the high sugar content and distinct flavors of varieties like Verdino.

Protecting in-ground trees in cold regions like my Zone 7A/6B area is essential because winter dieback completely resets the tree's fruiting cycle. When a branch loses its top third—whether from severe frost or improper pruning—the tree reacts hormonally by throwing out aggressive vegetative growth and water shoots instead of setting fruit. To safeguard fruiting wood, I bend pliable one- and two-year-old branches flat against the ground with garden staples, covering them with cardboard and insulating yard waste to trap radiant heat from the earth. If you need to manage tree size, avoid trimming off the top third of your branch tips; instead, trace tall scaffolds down to the base or a lower crotch to remove entire shoots cleanly, allowing the tree to naturally reduce its footprint without sacrificing next season's crop.
