Today we are whipping up a bright, refreshing, and incredibly delicious Lemony Pasta Salad that is absolutely perfect for your next summer cookout, potluck, or family gathering. Being from the Midwest, you know we take our pasta salads very seriously! This recipe is light, zesty, and a wonderful twist on the classic versions you might be used to.
Of course, the kitchen wouldn't be complete without our favorite Siberian Husky kitchen helpers! In this episode, our second best kitchen helper, Eleanor, wanders in the second she hears the us starting, while Kira is hanging out in the living room keeping her distance just in case (even though the oven isn't even on!). They both get excited when it's time to try some of the items in this salad!
Come along as we mix up a fresh homemade lemon and dill dressing, toss it all together, and get a final taste test approval from Jamie.
Ingredients: 16 ounces rotini noodles (or pasta of your choice) 1 English cucumber 2 bell peppers (red and orange preferred) 1 bunch fresh dill 1/2 cup Parmesan cheese (shredded or grated)
Dressing: 1/2 cup olive oil 6 tablespoons fresh lemon juice (about 2 large lemons) 2 teaspoons honey 2 teaspoons Dijon mustard 1 tablespoon minced garlic Salt to taste Black pepper to taste
Tips and Tricks: 🍋 Make sure to salt your pasta water generously before boiling to ensure the noodles are perfectly seasoned from the inside out. 🥒 Leave the skin on your English cucumber for extra crunch and a beautiful pop of green color throughout the salad. 🧄 If nobody is looking, feel free to add an extra scoop of minced garlic to the dressing for a little extra flavor kick. ⏱️ Let the pasta salad chill in the refrigerator for at least 2 hours after tossing it with the first half of the dressing to let the flavors fully marry. 🥗 Always save the second half of your homemade lemon dressing to toss into the salad right before serving so it stays perfectly moist and flavorful. 🌶️ Customize your bowl by adding a fresh crack of black pepper right at the end, just the way Jamie loves it. 🧅 If you don't have kids or picky eaters attending your gathering, adding some finely diced red onion makes a fantastic flavorful addition. 🍋 For an extra burst of bright summer flavor, grate some fresh lemon zest into the dressing or serve the bowl with fresh lemon wedges on the side.
Look ingredients and you guys aren't gonna believe this but look
Second best kitchen helper ever. I did not actually call her in here this time
She came in as soon as she heard me getting stuff ready. You might get promoted eventually little girl
Third best kitchen helper ever of course in the living room as always even though the oven's not on
Welcome back to snow dogs cooking where if I can cook it so can you?
We have a family gathering happening tomorrow
And I was looking for something a little bit different to make and I had some lemons and a few other things that I needed
to use
so we are going to make a
lemony
Pasta salad because you know, we're from the Midwest and pasta salads are a huge thing out here
If you know, you know, so this is gonna be like a nice summery a lemony pasta salad
What are you gonna need? You're gonna need 16 ounces of noodles of your choice. I am using rotini noodles
You're gonna need a cucumber. We are going to peel and dice it and do all of those things
You're gonna need two bell peppers, whatever colors you want. I'm going with a red and an orange
I actually yeah, I'm gonna go with a red and orange
That's what I want
You could go like I said with whatever colors you want if you want to do green do green you can add onion to this
That is optional. We have kids coming to the party. So I'm not gonna be adding onion
You're gonna need some chopped fresh dill. You're gonna need about a half a cup of
Parmesan cheese
That's what's going in everything and then you're gonna need this stuff for the dressing
You're gonna need a half a cup of olive oil. You're gonna need a six tablespoons of lemon juice
I am using fresh lemon juice. You can also use the lemon juice that comes in the little bottle
You're gonna need two teaspoons of honey. You're gonna need two teaspoons of Dijon mustard and then some
Oh, no, where is it?
Some garlic you're gonna want about a tablespoon of minced garlic
so you can either mince up your own garlic or
Use a tablespoon of that and then of course salt and pepper to taste
So before I even go through and start boiling these I'm gonna go through and cut up all of my stuffs
I'm gonna cut up my peppers first
I know a lot of people have issues with cutting up peppers and how long it takes and all that stuff
I cut the top off and now I'm gonna reach in here and I'm gonna twist and pull all the seeds out
Twist it pull them all out. Check that out. Now. I'm gonna cut this in half. I have the two halves
I'm literally just going to smash it flat to make it easier to cut and then cut it in my little strips
That's it. Super easy. Oh
Beautiful and cut up. We're gonna set that aside. Of course. I saved a couple of bites. Oh, look you're here
This is you're learning
Crunchy
That's good stuff, huh? All right delivery to Kira ready for some crunch
It's not a carrot. Oh, yeah, see yellow pepper
Like my dad pieces a little big there's some crunch happening
Good stuff
Next I washed my cucumber. I will be dicing this up. This is an English cucumber
So I am leaving the skin on I just wash it really well
You can also peel it if that's what you'd like to do. So we're gonna dice this up
This time I have to deliver to both of them because squirrel friend was here your first cucumber
cucumber
Good stuff, huh?
Good stuff. We're gonna wash and chop up some dill
At least like two tablespoons one tablespoons going in and one tablespoon is like for sprinkling on
I'm gonna go ahead and wash my lemons and juice them with my favorite
Juicer this thing is awesome. So I'm gonna wash these cut them in half
Beautiful lemon juice. This smells amazing. I'm gonna set that aside
Remember, I need six tablespoons. So I'll measure it out of that. That was two good-sized lemons
Next I'm gonna get a little bowl for the dressing and I'm gonna put my water on the boil for the pasta
We are actually going to cook this for as long as it says so this has 9 to 11 minutes
I'm gonna do this for 10 minutes. Also, don't forget to salt your water
Into the measuring bowl for the dressing we are going to add a half a cup of olive oil
remember the lemon juice six tablespoons of this into here and I
Just gonna measure it out. And if I have to do more lemons, I'll do more lemons
My two big lemons was just six tablespoons and a little bit extra. So it's perfect
Next we're going to add a tablespoon of minced
Garlic or garlic
Whatever one you like
nobody's looking
two teaspoons of honey, and I'm just gonna eye this because I don't want to
I don't want to make a mess in a little spoon where it's not gonna come out two teaspoons of Dijon mustard as well
Back to the dressing we're gonna go ahead and sprinkle some of this fresh dill right in here
How much is probably about a tablespoon?
We're gonna mix all this together and we're gonna do the thing where we set it aside. This is ready
I'm gonna take it over here put it in here and drain it, but I am NOT going to rinse it
I'm gonna let it cool for about 10 minutes noodles are gonna sit here and slightly cool for a few minutes
Except for these two which I apparently got two different sizes come out here and you get a noodle
Those ones I did rinse under cold water so they wouldn't be too hot. You are such a weird texture dog. It's a noodle
Honey, I promise it's just a noodle. You've had many before
And then a noodle sure how it's done Kira and you do for you that how it's done
Eleanor is still eating hers. No, you gotta finish it. You ate half of it. Look it's a noodle
Eat it or your sister will eat it
So I let the noodles sit till they're pretty much cool to the touch now. I have a great big bowl
Put them in the bowl do this
We are going to add all of our cut up peppers all of our cut up cucumbers all of our
Oh, wait, did I tell you how much of this yet a half a cup of Parmesan?
I'm using that kind you can use fresh shredded. You can use grated whatever you would like now
we're gonna take this dressing that we set aside over here and I'm going to pour half of it on to here and
The rest of its going in the fridge half of it on to here and no I'm going to toss all of this
Together remember, there's still half the dressing left
but we're gonna put this into the fridge and we are going to chill it for at least two hours and
Then right before you serve it you can put the rest of the dressing on it or after the two hours
You can put the rest of the dressing on it either way, but I'm gonna keep tossing this
This has been chilling like a villain for quite some time. I'm gonna go ahead and add the rest
the dressing and give it another good stir and the salad looks
Amazing. This smells so good. I cannot wait to try this
It's like a lemon lemony summer pasta salad, it's got olive oil and Parmesan cheese and peppers
And I've already been eating it. So I already know it's pretty good
It's like summery and refreshing
Lemon and Parmesan kind of go together
Yeah
That's different. It is it's not like any other pasta salad I've made
Yeah, cuz I don't it feels like I want it to be an Italian
You're waiting for the vinegar to kick right, right, but no, it's it's light
Neighbors shooting off fireworks. Mm-hmm. It's pretty good. I like it
No
There's dill in it. Yeah. Okay. Yeah, that's what you there is. There's fresh dill in it
Yeah, and lemon and Parmesan. Mm-hmm. I always want more Parmesan. I like that one. Yeah, I like that too
That pasta salad was a win if you like it a little bit more lemony
You can go ahead and add a little bit more lemon at the end or maybe just serve it with lemons
That's another thing you could do Jamie also really liked it with pepper added on it
I didn't put any pepper in it, but he liked it with the pepper added on it. That was really good
