Recipe:
400-450 g wheat flour (3.5 cups).
100 g (½ cup) sugar
20 g fresh yeast (1 oz).
200 ml warm water (1 cup).
1 egg yolk.
80 g butter (2 4/5 ounces).
5-6 g salt (1/2 teaspoon).
For the filling:
150 g butter (5 oz)
200 g figs (≈ 1 1/4 cups, chopped)
50 g butter (≈ 3 1/2 tablespoons)
80 g brown sugar (≈ 1/3 cup)
1 teaspoon cinnamon
6 g salt (≈ 1 teaspoon)
Knead the dough and let it rest for 60 minutes.
Shape the croissants as shown in the video. Brush with the egg-milk mixture.
Bake at 180 °C (356 °F) for 35–40 minutes.
