Ultimate chocolate cake dream: Rich, moist, and irresistible 🍫
Today we're baking an incredibly delicate coffee cake with Philadelphia cream and chocolate ganache 🤎. This is a simple recipe for a fluffy sponge cake without butter, coffee soak, and a delicate cream made from whipped cream and chocolate. If you're looking for a quick cake for tea or a festive dessert without complicated ingredients, this is the perfect one.
Recipe just right for you!
✅ Sponge cake:
Flour - 80 g.
Cocoa - 10 g.
Baking powder - 7 g.
Stir dry ingredients until smooth.
3 egg whites.
A pinch of salt.
Beat until fluffy.
80 g sugar.
Add gradually in small portions.
Beat until the sugar has dissolved and soft peaks form.
3 egg yolks.
Sugar - 20 g.
Vanilla extract to taste.
Grind until smooth.
Hot water - 60 ml.
Mix thoroughly.
Sift dry ingredients.
Stir until smooth.
Gradually add beaten egg whites in small portions.
Stir gently each time to keep the eggs nice and fluffy.
Baking tray 18 x 18 cm (or around 20 cm diameter).
Bake in a preheated oven at 180°C (350°F) for about 25 minutes.
✅ For waterproofing:
130 ml hot milk.
1 teaspoon of sugar (or to taste).
1 teaspoon of instant coffee.
Mix well.
Pour over the sponge cake.
Dark chocolate (50-60%) - 100 g.
Melt in the microwave or in a water bath.
Mix until smooth and shiny chocolate mixture forms.
Let the chocolate cool slightly.
Cream 33–36% - 175 ml.
Powdered sugar - 15-20 g (to taste).
Cream cheese (Philadelphia) - 175 g.
Beat until the mixture begins to thicken.
Add melted chocolate.
Stir until smooth and thick.
Spread evenly over the surface of the cake.
Let it rest in the refrigerator for several hours until it is completely solid.
✅ Chocolate ganache:
Dark chocolate - 100 g.
Cream 33–36% - 175 ml.
Heat in the microwave or steam bath.
Stir until smooth.
Cover the cake with chocolate ganache.
✅ Chocolate sprinkles for decoration.
This is such a luxurious coffee cake we baked today! A rich sponge cake drenched in milk and coffee syrup, with a delicate chocolate and cream filling and a velvety ganache topping. You should definitely make this dessert—it'll adorn any festive table.
