📋 INGREDIENTS:
• For the roulades:
• 4 large beef roulade slices (approx. 150–180 g / 5.5–6.5 oz each, thinly sliced)
• Salt, pepper
• 2 balls of mozzarella (125 g / 4½ oz each), drained
• 8–10 sun-dried tomatoes in oil, drained
• 1 bunch of fresh basil
• 8 slices of Parma ham or air-dried ham (approx. 100 g / 3.5 oz)
• 2 tbsp olive oil for frying
• Kitchen twine or roulade needles

• For the sauce:
• 2 shallots, finely diced
• 2 garlic cloves, finely chopped
• 2 tbsp tomato paste
• 200 ml dry red wine (¾ cup)
• 400 ml beef stock (1¾ cups)
• 2 sprigs of rosemary
• 1 teaspoon sugar
• 1 tbsp butter
