不知不觉做了6年美食博主了,之前有小伙伴问我视频怎么拍摄的,还有的小伙伴问我这么多机位是不是有团队。其实一直以来我都是独自完成一支美食影片的,一个人拍摄需要些技巧,今天就给大家从我的拍摄器材到如何拍摄分镜展开分享,希望能对大家有所帮助~

🍎 纯素苹果派/Vegan Apple Pie Recipe:
低筋面粉 150g cake flour
赤砂糖 15g brown sugar
素黄油 90g vegan butter
海盐 1g sea salt
豆奶 35g soy milk

馅料/Filling:
素黄油 20g vegan butter
苹果丁 350g diced apples
肉桂粉 1/2小勺 1/2 tsp cinnamon powder
肉豆蔻粉 1/4小勺 1/4 tsp nutmeg powder
红糖 25g brown sugar
玉米淀粉 5g sornstarch
清水 25ml water

顶部/Toppings:
浓椰浆 适量 Coconut cream (as needed)
赤砂糖 1小勺 1 tsp brown sugar


Tips: For easy browning, you can brush the crust with maple syrup instead.

Steps:

Dice apples into 1cm cubes. In a pan, combine all filling ingredients except the cornstarch slurry. Cook for about 5 minutes until the apples release water and the mixture thickens slightly. Add the cornstarch slurry, mix well, and let it cool completely.
Combine flour and softened vegan butter. Rub the butter into the flour with your hands, but avoid over-kneading to prevent gluten development.
Divide the dough into a 2:1 ratio and shape into balls. Roll out the larger portion between two sheets of parchment paper into a circle slightly larger than your pie dish. Repeat with the smaller portion.
Chill the rolled dough for 10 minutes. Preheat the oven to 200°C (392°F). Carefully peel off the top parchment layer and press the dough into the pie dish.
Add the cooled filling, then cut the remaining dough into strips and arrange them on top. Brush with coconut cream and sprinkle with sugar. Bake at 200°C for 15 minutes, then reduce to 185°C (365°F) and bake for another 20 minutes. Cover with foil if it browns too quickly. Let it cool and refrigerate overnight for the best flavor!

步骤:
1.将苹果切成长宽高约一厘米的丁,锅里加入饼胚部分除水淀粉以外的所有食材,炒约5分钟让苹果出水后略微浓稠,加入水淀粉翻拌均匀出锅,放至完全凉透。
2.加入面粉和稍微软化的素黄油,用手将面团中的碎屑揉进面团中。注意不要揉得太紧,否则黄油会开始融化切面团会起筋。
3.将面团分成2:1,然后大致揉成球状。 1 个面团球放在一大张撒了少许面粉的烘焙纸上。撒上一些面粉。将第二张烘焙纸放在上面,用擀面杖将其擀成比烤盘底部加两边宽度还长一点的圆形。对第二团面团重复上述步骤。
4.卷好后冷藏10分钟,准备组装时,将烤箱预热至 200度,取出饼胚小心地剥去最外层的羊皮纸扣在烤盘上用手捏紧。
5.然后倒入馅料,剩余面团切成长条组装在表面,刷上椰浆,撒上一些砂糖烘烤,200度烤15分钟后调整到185度继续烤20分钟,观察变化,上色后也可以加盖锡箔纸,取出放凉最好冷藏一夜再吃会更美味!
