
My Super Sourdough Bread
Super bread 其实是本地超市Trader joe's 的一款热卖面包。看了它的配料表收到启发,用天然酵种做了两个。虽然无油无糖,各种种子带来的油脂香气,还有胡萝卜苹果提供的一点点甜味,都让这款面包绝对的名副其实!
其中一个照例用铸铁锅烤,另外一个我就直接放进土司盒二发,然后第二天一起烘烤。外壳不如铸铁锅的脆,但更柔软,而且省事儿。
食谱:(2个面包)
300g 高筋粉
300g 全麦粉
480g 水
120g 酵种
12g 海盐
30g 苹果片
40g 胡萝卜丝
40g 亚麻籽
40g 黑芝麻
40g 葵花籽
40g 南瓜子
事先烤箱,用160g水浸泡1-2小时。
四次拉伸折叠,主发酵7小时,过夜冷藏二发。隔天烤制。450F带盖20分钟,425F不带盖再烤20分钟,
300g Bread flour
300g whole wheat flour
480g water
120g levain
12g sea salt
30g apple chips
40g shredded carrots
40g flax seeds
40g black sesame
40g sunflower seeds
40g pumpkin seeds
all seeds were roasted and then soaked in 160g water
4 sets of coil folds
7hours bulk fermentation
Proof overnight in refrigerator
I baked one loaf in a dutch oven and another in a loaf pan. Both are very soft and moist.
20 minutes with lid at 450F and 20minutes without lid at 425F.
