📒食材/Ingredients :
碱水面 Alkaline Noodles
空心菜 Water Spinach
📒辣椒油/Chili Oil:
选两种以上干辣椒 80g Dried Chilies
菜籽油 320g(油和辣椒比例4:1)320g Oil (Roughly 4:1 of Oil and Chili)
草果1个 One Black Cardamom
八角1个 One Star Anise
香叶3片 3 Bay Leaves
桂皮一段 A Piece of Cinnamon Stick
生姜(拍散)8g Ginger (Crushed)
花椒 5g Sichuan Pepper
白芝麻 一小把 White Sesame Seeds
📒小面调味料/Seasonings for Noodles:
辣椒油2大勺 2 Tbsp Chili Oil
生抽 1大勺 1 Tbsp Soy Sauce
醋 ½小勺 1/2 Tsp Black Vinegar
青花椒面 半勺 1/2 Tsp Crushed Green Sichuan Peppercorn
芝麻酱½小勺 1/2 Tsp Sesame Paste
香油 1小勺 1 Tsp Sesame Oil
昆布粉 半小勺 1/2 Tsp Kombu Powder
花生碎 一大勺 1Tbsp Chopped Peanuts
榨菜碎 一大勺 1 Tbsp Zha Cai
宜宾芽菜 一小勺 1 Tsp Yibin Yacai
