Can't enjoy spring without spring rolls, In this episode, I made two type of spring rolls, with rice paper and homemade wrapper.
春天自然少不了春卷,记得去年还买了越南春卷皮忘记在冰箱,刚好用来做了一个春卷拼盘,惊喜的是中式炸春卷搭配清爽的越南春卷真的非常和谐,吃一口炸春卷再吃一口越南春卷会感觉很解腻,味蕾层次立马提升不少!
Ingredients/材料:
春卷皮/Spring Roll Wrapper
中筋面粉 200g All Purpose Flour
海盐 2g Salt
50度温水 100g Warm Water
食材/Ingredients:
嫩豆包或豆腐 150g Soft tofu
豆芽 一小把 A Handful of Bean Sprouts
荷兰豆 一小把 A Handful of Snow Peas
豆干 一块 One Dougan
红美人椒 一个 Red Pepper
姜丝 适量 Sliced Ginger
调味料/Seasonings:
胡椒粉和盐 Pepper and Salt
生抽 Soy Sauce
越南春卷食材/Vietnamese Spring Rolls:
越南春卷皮 Vietnamese Rice Papper
芒果 半个(酸甜不太熟的) Half Mango
水果黄瓜 半个 Half Cucumber
胡萝卜丝(熟)小半根 Half Shredded Carrot (cooked)
紫甘蓝 一块 Purple Cabbage
熟鹰嘴豆 适量 Cooked Chcikpeas
生菜 一小块 Lettuce
粉丝 一卷 Vermicelli
越南春卷蘸水/Dipping Sauce for Vietnamese Spring Rolls:
生抽 一小匙 1 Tsp Soy Sauce
糙米醋 一大匙 1 Tbsp Brown Rice Vinegar
枫糖浆 一小匙 1 Tsp Maple Syrup
清水 一大匙 1 Tbsp Water
熟芝麻(碾碎) 一大匙 1 Tbsp Crushed Sesame Seeds(cooked)
小米辣 一个 1 Tabasco Pepper
盐和黑胡椒 适量 Salt and Pepper
香菜 两大匙 2 Tbsp Coriander
