Lion's head is a must-have for the New Year’s Eve dinner. I cook it for my family every year. All the ingredients are vegetarian. My family initially thought that vegetarian lion's head can't be delicious at the beginning. After they tasted it, it was unexpectedly delicious! So in this episode, I shared this family secret to you. This is the dish that brings all the family happy memories.
狮子头是一道年夜饭硬菜，每到过年的时候我也会做给家人吃，食材全部用到素菜，家人刚开始觉得素菜做的能好吃吗？但当他们尝了之后竟然意外的很好吃，所以相较于传统做法，这算是我家餐桌上独有的味道吧，虽说是道一年才吃一次的硬菜，但入口的一瞬间就感觉回家了，一家人其乐融融，欢声笑语...
There are many types of lion's head in different regions. I prefer the Sichuan Style. The doubanjiang is added to give the oil bright and red color. The flavor is slightly towarding the spicy and salty side with the addition of ketchup to make this dish even more complex in flavor !
不同地域的狮子头味型也有很多种，我更偏爱家乡川渝的调味方式，加豆瓣炒出红油，颜色红亮更有食欲，味道微辣咸鲜，加上番茄酱微微的酸味特别棒！

食材/Ingredients:
莲藕 500g Lotus Root
荸荠 3个 Water Chestnuts
山药 80g Yam
油豆腐 80g Fried Tofu
菌菇（2种以上）150g Mushroom You Like (More than two kinds is recommended)
玉米淀粉15g Corn Starch
干香菇 3朵 Three Dried Shiitake Mushroom
面粉 20g Flour

丸子调料/Seasonings For The Vegan Meatballs
五香粉 1/4小匙 1/4 Tsp Five Spice Powder
白胡椒粉 1/2小匙 1/2 Tsp White Pepper Powder
海盐 适量 Sea Salt
生抽 1大匙 1 Tbsp Soy Sauce
香油 1大匙 1 Tbsp Sesame Oil
姜末 5g Minced Ginger

酱汁/Sauce：
姜末 3g Minced Ginger
生抽 1大匙 1 Tbsp Soy Sauce
老抽 1小匙 1 Tsp Dark Soy Sauce
水淀粉 3大匙 3 Tbsp Starch Slurry
番茄酱 2小匙 2 Tsp Ketchup/Tomato Sauce
郫县豆瓣 2小匙 2 Tsp Pixian Douban
胡椒粉1/2小匙 1/2 Tsp White Pepper Powder
泡香菇的水 150ml Water that Soaked Mushroom
清水 100ml Water
花椒油 几滴 Few Drop of Sichan Pepepr Oil
冰糖 8g Rock Sugar
