
「素食」有谁吃过菜苔洋芋“箜饭”⁉️ 完全停不下来 |【Vegan】One Pot Rice With Potato and Coy Sum (Kōng Fàn)
kōng fàn is a very popular dish in Sichuan and Chongqing. The dish is made with half cooked rice, then cover the ingredients and add some water to simmer. This method will transfer the aroma of potatoes to rice.
“箜饭”是川渝地区非常流行的乡村美食,流传这么久自然有它的经典之处,不同于焖饭,箜饭是加入7分熟的米粒盖在食材上加少量水文火焖熟而成,这种方式会将土豆的香气更好的传递给米粒,达到融为一体,成品干香松散,这就是为什么箜饭有一种独特的烟火气,那是食材最自然的味道。
初春的时候我们这边会出产很多小土豆,箜饭一定要小土豆才够香甜,以前在乡村从小就是吃这样的土豆,这个时候的豌豆也特别鲜甜,一定要加。
初春也正是各种菜苔出产的时候,代表着春的气息,其中油菜苔、紫菜苔是我的最爱,油菜苔甜甜的,紫菜苔微苦中带着一种独特的味道,两种组合搭配做箜饭真的太好吃了,最后就只需要加盐,不禁感叹大自然的鬼斧神工,这也是大自然的魅力吧!
Ingredients/材料:
小土豆 500g Small Potatoes
大米 1.5杯 1.5 Cup Rice
清水 约150ml Water
鲜豌豆 1/2杯 1/2 Cup Fresh Green Pea
紫菜苔 8株 Eight Purple Choy sum
油菜苔8株 Eight Choy Sum
核桃 2个(碾碎) Two Walnut(Crash)
海盐 适量 Sea Salt
