It's summer in Chongqing, so I decided to have a poke bowl as breakfast. The colorful vegetables will make you full of energy throughout the day.
This is a warm poke rice, as it contains no raw ingredients. For those who don't like raw ingredients, this is the perfect poke bowl to start a day.

最近开始要穿短袖的模式,重庆的夏天总是来得那么早,那么来一份清爽的波奇饭吧,五彩的蔬菜会让一整天活力满满,相对于生食这款属于温食版的波奇饭,特别适合亚洲胃,营养又健康

Ingredients/材料:
老豆腐 130g Firm Tofu
鲜毛豆 80g Fresh Edamame
有机胡萝卜 100g Organic Carrot
烤腰果 1大匙 1 Tbsp Roasted Cashew
小番茄 3个 Three Small Tomatoes
牛油果 半个 Half Avocado
海苔 1/4张 1/4 Sheet of Nori
炒香芝麻 1大匙 1 Tbsp Roasted Sesame Seeds
藜麦米饭 1碗 One Bowl of Quinoa Rice

调料/Seasonings:
姜黄粉1/4小匙 1/4 Tsp Turmeric Powder
营养酵母粉1大匙 1 Tbsp Nutritional yeast Powder
盐和黑胡椒适量 Salt and Black pepper
香油 适量 Sesame Oil

芥末油醋汁/Mustard Vinaigrette:
香油 2小匙 2 Tsp Sesame Oil
有机酱油 1大匙 1 Tbsp Organic Soy Sauce
糙米醋 2小匙 2 Tsp Brown Rice Vinegar
枫糖浆 2小匙 2 Tsp Maple Syrup
青芥末 1/4小匙 1/4Tsp Wasabi
