Did you get him?
I got him.
Dunkin' Donuts.
Alright.
So a lot of you have sent us messages saying that you love Dunkin' Donuts and I'm going
to share this with you, Kevin, that we should try the chocolate glaze one and see if we
can make a bigger bowl version.
I want you to see what the big fuss was about.
Gemma, you could totally do these.
Yeah, it's nice.
I could absolutely recreate these, no problem.
Saving us a trip to the donut shop.
Let's do it.
Then start the car.
Saving you a trip.
So I'm excited to make some donuts, I'm going to start out by making my dough on my stand
mixer.
So into my bowl, I'm going to add in flour, sugar, salt, and some yeast.
So just so you know, I use instant dried yeast which gets added straight to the flour.
If you use active yeast, you have to activate it in liquid.
So I'm just going to give this a little bit of a mix up and over here, I have some milk
and into this I'm going to add in a little bit of butter and then all I'm going to do
is just take this away, pop it into the microwave and melt that butter and let the milk get
nice and warm.
So our butter's melted, into this I like to add in a little bit of my vanilla extract
and this just gives a lovely flavor to your donuts.
Okay, lovely.
Now we're going to turn on our machine to like medium speed and we're going to add our
wet into our dry.
Just add enough liquid until your dough comes together.
So now I'm going to let this knead for roughly 6-8 minutes.
If you want to do this step by hand, if you don't have a stand mixer, then you can absolutely
do that.
You're just going to need a lot of elbow grease.
So these are yeasted donuts and in my opinion, very like the Dunkin' Donut.
If you're more of a fan of the kind of old-fashioned donuts, buttermilk donuts, sour cream donuts,
those cakey, heavy donuts which are super delicious, I also have a recipe for that on
my website.
I've got tons of donut recipes on my website so check them out.
So our dough is looking good.
It's nice and soft.
This is a really lovely dough to work with.
You'll see that when you get your hands on it.
So now I'm going to take it out and I'm going to pop it into my bowl, which I oiled with
a little bit of vegetable oil.
And then I'm going to cover it with a shower cap.
Now what you want to do now is let it proof at room temperature, somewhere kind of warm
and snug, for around an hour and a half to two hours.
I usually give it a full two hours, then we're going to come back, cut them, and get them
into the fryer.
So it's been two hours and my dough looks gorgeous.
It's lovely and puffy and really soft.
This is the way I like it.
So now here you can see I've got a floured surface.
Put a little bit of extra flour on top of your dough.
And then with my rolling pin, I'm going to roll this out kind of thick, maybe half an
inch thick or even a little bit thicker if you like big donuts.
Don't go too thin, that's for sure.
That looks around half of an inch thick.
Okay so now to cut out our donuts, we are not going to use a donut cutter because we
don't have one of those.
So we're going to use some scone cutters.
Here's a 3-inch one and then the smallest one possible, and we are going to use these
to cut out our donuts.
So cut out the big circle, all the way around.
This recipe will make around 12-14 donuts.
And then with your little baby cutter, go and cut the holes.
Who doesn't love a good donut hole?
For some reason it tastes different than a regular donut.
I don't know why, maybe it's the shape.
So donut dough is very forgiving, so you can re-roll it after you've cut out all your donuts
and get even more donuts.
Now I'm going to lay my donuts onto a tray lined with parchment paper.
I'm going to set my donut holes over to the side because they proof separately because
they proof much faster.
With my big donuts, I'm going to cover them up with some cling wrap, I'm going to put
a tea towel over them, and I'm going to let these proof for around 20 minutes to half
an hour or so.
We want them to get nice and puffy and grow.
So I gave my donuts half an hour and they are looking perfect.
You can tell when they've proofed correctly because they're kind of rounded and softened
out.
So I'm just going to leave those there, I'm going to keep them covered, and over here
I have a heavy bottomed saucepan and I'm going to fill that with a few inches of oil.
We don't have to deep fry them, we're going to shallow fry.
You can use vegetable oil, sunflower oil, canola oil.
And then we are going to heat that up until around a medium heat.
You don't want your oil to smoke, but you also don't want it to be too cold, otherwise
the oil will seep into the donuts.
Okay I gave this a little bit of time and the oil looks like it's hot enough.
So I'm going to go and add maybe just like 4 donuts or so to my pot, 4 or 5, and then
start to cook them.
So you cook them for roughly around 2-3 minutes on the first side or until they're lovely
and brown.
Then you flip them over, and then cook them for another 2 minutes or so on the other side
or until brown again.
Fantastic.
These are looking gorgeous.
So I'm just going to take them out there and I'm just going to lay them onto my tray
lined with some kitchen paper, just to kind of dab off that extra oil.
And then lastly, don't forget to do your donut holes.
So our donuts are looking gorgeous, now here's what I like to do while they're still warm.
I have a bowl here of my chocolate frosting for donuts, this is on my website, you can
check that out.
And I am going to dunk my donuts while they're still warm in here one at a time.
So dunk it in, give it a good dunk, twist it, let any excess drip off, and then put
it onto your cooling rack.
And while the frosting is still damp, I'm going to sprinkle over my sprinkles.
You want to do the sprinkles after you dip them because your glaze will set.
Then just go ahead and do all your donuts.
Ok so are these donuts better than Dunkin' Donuts?
I'll let Kevin be the judge.
Ok Gem, it was time to make the donuts, and you did it.
Wow Gem, the flavor of the donut combined with that chocolate frosting on top, that
is just awesome.
Like I love this, I can't believe you can make donuts like this at home.
It took no time at all, they're super delicious, and they taste like real legit Dunkin' Donuts
don't they?
I think so.
I think so anyway.
Let you be the judge of that, head over to my website, the recipe is on there, let us
know what you think, and we'll see you back here again really soon.
Thanks guys.
Keep going Gem.
How about vanilla next time?
Vanilla?
Oh yeah, vanilla glaze.
I love vanilla glaze donuts.
