This is the best Classic Eclair Recipe, that is absolutely yummy. This Homemade Eclair filled with pastry custard cream and topped with chocolate ganache make it so delicious. My kids can not stop eating them and I love it so much.
The Eclair is made with Choux Pastry which is made of simple ingredients. It is a soft dough that you can pipe onto the baking sheet.
These pastries cooked in right temperature for 425 F for 10 minutes and then decrease temp o continue cooking.
The pastry cream is made of milk, vanilla and depend on corn starch and egg yolk to thicken. The butter will add the smooth texture. It can be prepared a head and kept in the refrigerator to be used later.
Ingredients Makes 20 - 24 eclairs
For Cream Filling or Cream Custard :
2 cups milk
2 tsp vanilla extract
4 egg yolks
2/3 cup sugar
1/3 cup cornstarch
2 Tbsp unsalted butter
For the choux pastry
1/2 cup milk
1/2 cup water
1/2 cup (8 Tbsp) unsalted butter
1/2 Tbsp sugar
1/2 tsp salt
1 cup flour
4 eggs
For Chocolate Ganache
1 cup semi-sweet chocolate chips
1/2 cup heavy whipping cream (hot)
