In this video, I am showing how to make Bang bang Chicken (or Bang bang Ji, also known as Bon bon Chicken), steamed or poached chicken breast with sesame/peanut sauce. This is a perfect dish for the Sommer, since it is a cold dish.
In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients that are easily available outside of Japan.
Ingredients for Bang bang Chicken Chicken (thigh or breast) 200 g Salt 1/4 Tsp Ginger small piece Sake (or white wine) 1 Tbsp Tomato & Cucumber 1/2-1
Welcome to Taiji's Kitchen.
Today I'm going to show you how to make Banbanji or Banban chicken.
So this is also another Chinese dish that a lot of people make at home in Japan.
This is also very easy and this requires no special ingredients so you can make this pretty
much anywhere in the world.
So this is another cool dish perfect for hot summer.
So I hope you give this a try as well.
Then, let's get started.
Here are the ingredients for Banban chicken.
Here I have deboned chicken thigh meat.
You can also make this with chicken breast if you want to make a lean version of this
but I personally prefer this because it's more juicier.
But it's just a preference thing.
And I have salt for seasoning.
And today I'm going to show you a version where I steam with sake in a microwave.
If you don't have a microwave then you don't need sake.
You can also boil this in water.
And for the sauce I have scallion, ginger, garlic, soy sauce, sugar.
And here I have unsweetened peanut butter.
Traditionally they use actually sesame paste but today I didn't have it so I'm going to
substitute with peanut butter but they're both very delicious.
And then I have rice wine vinegar.
If you don't have this then you can also use any other kind of vinegar such as apple vinegar
or white wine vinegar.
Then I have a little chili and sesame oil.
And for the condiments I have a tomato and a cucumber but you can also use any other
kind of vegetable for the condiments.
Then let's start cooking.
We're going to first prepare the chicken.
So I'm going to make a slice of ginger.
Like one, two, three, four slices or so.
And then I'm going to sprinkle a little bit of salt on the chicken.
Very lightly on both sides.
Then what I'm going to do is I'm going to spread the ginger on the plate like this and
put the chicken meat right over it like this.
I won't have the skin on the top side because after it gets cooked, while it's cooling down
I want to let the meat soak in the juice.
Then in this I'm going to put in about a tablespoon of sake.
If you don't have sake then you can just use regular white wine.
I'm going to put the sake from the side.
Then I'm just going to put over this a saran wrap.
I'm going to double saran wrap it so the juice stays inside the plate.
Then I'm going to put this chicken meat in the microwave and cook this for about four
to six minutes or so depending on the power of the microwave.
So the plate is very hot so please be very careful.
So what you want to do is you want to check the meat is cooked through.
So the way to do that is you want to kind of press down on the meat and if you feel
it kind of squishy and doesn't push back, like here this is very well cooked and I think
this meat is cooked through so this is finished but even after the time is over if it's not
cooked then you want to give it another minute or so.
So what I'm going to do is I'm going to let it rest like this in its own juice.
As it cools down it soaks in the juice and stays very juicy.
That's the way to make it juicy.
So I'm going to let this cool down.
As we are waiting on the chicken meat to cool off, I'm going to prepare the condiments and
make the sauce.
So for the tomato, I'm just going to make slices.
I'm going to cut this in half and I'm going to take off the stem part like this because
it tends to be a little bit hard and I'm just going to make thin slices.
Also here.
And then for the cucumber, I'm going to take the top and the bottom off.
I'm going to make a diagonal slices and I'm going to try to make it intact.
It doesn't have to be very thin.
And then what I'm going to do is I'm going to lay it over like this and I'm going to
cut like this.
Then this way I have about the same size strips of cucumber.
Then I'm going to lay this on over a plate and I'm going to put the cucumber in the middle
like this.
I'm just going to spread it out and then put the tomatoes.
Just like this so that it has a neat form.
Now let's make the sauce.
So I'm going to cut up the scallion and I'm just going to give little slits in the middle
like this so that the piece will be kind of smaller and then cut these into small pieces.
Then this.
I'm going to put in first the garlic and then a piece of ginger and you can put in the ginger
like this and then press it with the garlic smasher and you're left with the skin in the
inside so it's a little cooking hack.
So the skin is inside.
If you don't like this fibery part then you can of course throw these away but I don't
like wasting these so I'm just going to try to cut up this fiber part and then put this
back in here because it's still good.
Then here I'm going to put in 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 teaspoon
of sugar.
If you're using sweetened peanut butter then you don't need the sugar.
Then here about 2 tablespoons of peanut butter.
Then here about 1 tablespoon of sesame oil and then how much ever chili you want to put
in.
Then here I'm going to put in about a tablespoon of this juice from the chicken because this
is too good to be wasted.
Oh this looks so good.
A tablespoon.
And then I'm going to give this a good mix.
Once there are no chunks of the peanut butter then the sauce is finished.
Then let's see the chicken.
Oh this is looking so good.
And then I'm going to make small strips from this.
Look at that.
So juicy.
Then we're going to put over this the sauce.
Then this is finished.
Let's eat.
Oh this looks so good.
I can't wait to eat.
Itadakimasu.
Oh that looks so amazing.
Itadakimasu.
This peanut butter sauce is totally perfect.
So delicious.
Oh this is totally delicious.
If I didn't know I wouldn't think this would be cooked in a microwave.
I would have thought this was cooked just normally in an authentic.
The meat is very juicy and yet tender and this peanut butter sauce is so amazing with
the meat.
This cucumber is adding like a fresh layer to it and it just matches so perfectly with
the sauce.
So good.
And then I'm going to have it also with the tomatoes.
Oh the sauce and the chicken also goes so well with the tomatoes.
Oh this is so totally delicious.
I'm going to add a little extra sauce to it.
So delicious.
Oh this sauce is really just totally amazing.
So delicious.
Totally great with the vegetable.
So this sauce you can use it just as a regular dressing.
So delicious.
Really great.
So this is a big advantage of using a chopstick.
You can pick up any small pieces from the plate so you don't waste any food.
Oh that was totally savory.
Oh that was so delicious.
So as you saw, making Ban Ban Chicken is very easy, especially using the microwave.
It took me no more than like 20 minutes or so.
Because the dish itself is cold and also I don't use a stove, this is perfect for the
hot summer.
I also use the summer vegetables such as cucumber and tomatoes.
They also have the effect of cooling down your body.
So that's another reason why it's perfect for the summer.
And this dish requires no special ingredients whatsoever so I hope you give this a try.
