I wish everyone a very happy Thanksgiving. Today, I bring you soy sauce chicken.
In order for the chicken to have a nice soy sauce color,
when we wash the chicken, we could add a little baking soda on the skin and rub it against it.
After drying it, we could also use a paper towel to rub off a layer of fat on the skin.
You'll notice your chicken is very shiny and nice.
So again, this will ensure our chicken will have a nice soy sauce color.
In a pot of room temperature water, add the chicken, 3 pieces of ginger, 2 stalks of scallions.
Cook in high heat until boiling. Turn to low heat and simmer for about 5 minutes.
We're going to turn the chicken and simmer for another 5 minutes.
Take the chicken out and put it aside.
In a pan, add half cup of soy sauce, 1 tablespoon of dark soy sauce,
4 tablespoons of Shaoxing wine, 2 tablespoons of oyster sauce, a pinch of salt,
3 slices of ginger, 1 stalk of scallions, 1 cinnamon, 2 pieces of caoguo, 3 pieces of star anise,
2 bay leaves, 1 quarter cup of water, 1 block of yellow rock sugar,
and we're just going to cook everything until it is perfectly blended.
Add the chicken in the pan and cook in low heat.
Constantly pour the sauce on top of the chicken for about 5 minutes.
Turn the chicken and again constantly pour the sauce over the chicken.
Now within this cooking process, we're going to have to turn the chicken for a couple of times.
And we'll have to keep on pouring the sauce on the chicken in order for it to have the
beautiful color. And the total cook time of my 3 pound chicken is about 25 minutes.
Take the chicken out and dry it on a baking rack. I hope you enjoy this recipe.
I think it will be a great new tradition with a Chinese twist,
and your family will love it. So remember to subscribe, thumbs up, and comment below
